I propose he SUPER bad ending where Mabel turns out like ford and Dipper turns out like Stan.
Mabel’s curiosity and joyous whimsy turns into continuing the journals and finding out what ford couldn’t about gravity falls + the multiverse, falling into the portal like ford did.

He'd absolutely be pissed when he'd see that Mabel was being blamed for Weirdmageddon.
Anyways, to answer your first question: They saw her as someone who's selfish and doesn't care for her brother. That she always did stupid shit and her brother always sacrificed his stuff for her, and that she would never do the same.
Which, honestly, is such a shitty argument.
1. She's 12. Should be enough, but no.
2. She wasn't forced into self-sacrificing situations like Dipper was.
3. SHE STILL HAS SACRIFICED FOR DIPPER WHEN IT WAS NEEDED (The sock-puppet episode and a few others that i can't think of rn).
4. The reason people blame her for weirdmageddon is 'cause she gave the rift to Bill who was possessing Blendin. She LITERALLY didn't know that the rift was something that'd cause the end of the world. Let's be honest, it was partially Ford's fault for not trusting his family and telling them about this rift (other than Dipper, who he projected himself on). Also, she genuinely seemed shocked when that happened. And in weirdmageddon part 2, she looked even more shocked and sad seeing what gravity falls turned into after she'd left her prison.
5. Let's be honest, Dipper is as selfish as Mabel. His misbelief was even clearer than Mabel's.
(I could go on and on. But it'd be tedious to read. And I don't have time rn to say everything/cover everything. Though I'd recommend watching this video to get a better understanding on the points I've made).
Tldr: GOD FORBID WOMEN DO ANYTHING.
For your second question, unfortunately, yes. There are a few left. Though, I'm pretty sure Mabel haters were always in the loud minority. Currently, most of them have just shut up or actually realized that she's not bad.
