Enchiladas
I decided on making some Enchiladas because I was craving some Mexican food. The picture above shows it before it went in the oven. I forgot to take a picture of the finished product. LOL.

Beef Fajitas Lettuce Wrap
Fajitas are always a hit. Today, I'm changing it up and using lettuce instead of tortillas. Love this versatile dish. Somedays, I have it with rice and beans.

Taco Tuesday Tacos Al Pastor
Taco Tuesday is a day to eat tacos at a discounted price. My favorite is the simple street tacos with carne asada or al pastor. Top with onion, cilantro and fresh lime juice. So simple yet it is so good.

Chili Con Carne
On a chilly, rainy day, what could be a greater cause for preparing a pot of chili? I've been questioned in the past about the beans I use for chili. I enjoy kidney beans because of their firmer, less readily breakable skin. I also know that corn is an unusual addition to chili, but it's my way of adding color. Of course, no chili is complete without some steam white rice.
After all is said and done, I realize that a lot of life's joy is spent with the people we cherish and our favorite foods. And the sweetest possible end would be a box of chili to take away for them.

I credit Dave Lieberman of the Food Network with inspiring me to make this version of Mexican chicken stew. This tasty, filling, and quick Mexican chicken stew is so easy to prepare. It's a favorite for busy evenings and tastes great. I like to play around with different recipes that use rotisserie chicken, but you can cook and shred your own chicken if you'd rather. I prefer chunks over shredded. The tender, shredded rotisserie chicken adds to the stew's deep, flavorful flavors.
FYI. You will notice that i made some minor changes like I prefer chunks of meat over shredded.
