The app I keep recipes on stopped letting me edit recipes for some reason so I undownloaded it and redownloaded it at like 1am completely forgetting that most of that shit wasn’t synced.
Moral of the story don’t delete shit between the hours of 9pm and 6am 🙃
I can retake pics of all the recipes easy (minus one or two I edited profusely,,, like my pumpkin cheesecake, or granola ratio) but it’s the pics of the food that are just GONE. Most of them weren’t saved to my phone.
And thus starts my baking achievement hunter journey this summer as I scramble to redocument my favorite recipes.
And since I’m bored I’m gonna be posting about it.
I miiiiiight like pumpkin bread more than banana, but it takes more to make it work.
The recipe I’ve got calls for 15oz of pumpkin but makes enough batter for 1 and a half loafs. So I need to add an extra half to the recipe. The problem lies in the pumpkin. The two can sizes are 15oz and 2 times 15oz minus 1oz (29oz) for some reason??
There is no winning here.
Either I give in and just make muffins, make 2 sad flat loafs, or I freeze 5-9oz of pumpkin to do…. what with? Idk man… Maybe I should try sweet potatoes instead.
The crust on this bread tho actually gets pretty nice and caramelized if you cook it a lil longer which is great in contrast with the gooier center.

Made buttermilk cornbread last night to go with chili, as is the quota.
And not five seconds after it comes out of the oven, my mother swoops in (in a deranged keto-induced hunger) and makes the most dogshit slice I have ever seen in my life. It’s over before I can even comprehend it.

Back at home and I immediately retried cranberry loaf! The college ovens tend to run hot and I always forget that so my first attempt at this recipe was very… dry.
This time around it went off without a hitch! Except for when I asked my mom if it’s worth pulling out the food processor or just chopping the cranberries and she said use the emersion blender, and I… listened to her for some reason. So the berries were pulverized, and the thing was honestly more annoying to clean than anything else.
All in all though, this is a nice light less sugary bread on the crumbly side with pops of good tanginess. It was gone by the end of the night. Would’ve preferred larger cranberry chunks tho
